It affords us much pleasure to introduce this new potato, as we are thoroughly persuaded that in it we have secured the best and most profitable main-crop potato ever produced. It originated with our friend, Mr. E. L. Coy, of Washington County, N. Y., whose life- long experience and skill give him the well-deserved position of the most successful originator of new potatoes—his success being judged, not by the number of varieties, but by their sterling merit. Burpee's Empire State is a strikingly beautiful potato. As shown in the illustration, it is somewhat more oblong than the Beauty of Hebron ; the skin is white and smooth ; eyes shallow, but strong, a single eye being fully sufficient for a hill. The flesh is pure, snowy white and floury; it is peculiarly rich and delicate in flavor, and cooks evenly throughout without any coarseness. It is decidedly the best white cooking potato. The vines are very rank and vigorous in growth ; the roots are strong and extend very deeply into the soil, although the tubers lie very compactly together in the hill, at the proper depth, and are easily dug. Its healthiness is most remarkable. Its strong and deeply penetrating roots enable it to stand severe drought exceedingly well. The originator has never seen a hollow or a rotten potato of this variety. It is enormously productive, having yielded at the rate of nearly 6oo bushels per acre, and tested alongside of all the most popular potatoes, it has in every case outyielded all others.
