This difference forces air through the stacks and carries produce heat away primarily by flow around the individual fruits or vegetables in the containers (figs. 18- 22) , rather than by flow around the outside of the containers (as in room cooling) . In forced-air cooling, cooling speed can be regulated by adjusting the volume of air. Rapid cooling can be accomplished with adequate refrigeration and a large volume of air flow per unit of produce.
