Mutton is largely consumed in the coun-try, and is killed, dressed, and cooked in aspeedy and simple manner. The sheepbeing hung by its hind legs to a tree, itsthroat is cut, and the blood is received intoa bowl and mixed with salt, in which stateit is thought to be a very great sheep is then opened, and the whole ofthe interior removed to be cleaned andcooked, this being held as the best part ofthe animal. The skin is then removed, thebody is split along the spine from head totail, and each half is transfixed with a stick,and set over the fire.
