The ultra modern oil processing plant of the Nunez de Prado olive oil producing plant in Baena Spain. The tall machine in the foreground is an oil press. Layers of crushed olives are placed on each of the mats seen at the bottom of the machine and then pressure is applied to the entire stack of mats. The oil that is extracted from the mash drips down to a collection point at the bottom and is drained off to settling tanks before bottling.
