It requires a large quantity of milk at one time, and this can only be obtained by the the co-operation of a large number of farmers living near to each other. For this purpose cheese factories are now being established in many places. Just, as in the case of creameries, the suj erior facili- ties for making the cheese and fitting it for the market, are giving Canadian factories a high reputation all over the world.
