Parsnips are well known as a delicious table vegetable, but their value for the purpose of feeding cows and cattle is but little appreciated. The parsnip is rich in saccha- rine food, which adds greatly to the richness of the milk when fed to cows, while the fresh, succulent roots increase the flow of milk as greatly as does the use of fresh green food in the spring. The parsnip is especially valuable for the purpose from its extreme hardiness, as the roots can be left in the ground all winter and improve in qual- ity by the coutinued freezing.
