Homemade gravadlax from a rainbow trout, Oncorhynchus mykiss, that was caught from a stocked reservoir with fly fishing tackle. The fillet from the trout has been cured and flavoured with salt, black pepper, brown sugar, maple syrup, fresh dill, whisky and beetroot juice. The slices from the fillet are pictured here on a terracotta plate with fresh dill garnish, mustard and dill sauce and lemon wedges. Placed on an acacia wood chopping board and slate background.
