The seed from which sugar beets areraised is imported from France and Ger-many, where, for many years, the businessof growing seed has been in progress. Inits indigenous condition, originally alongthe shores of the Mediterranean, the beetcarried 6 or 7 per cent, of sugar ; but byprocess of natural selection and breeding,the amount of saccharine matter has beenincreased to 25 per cent. To raise merchantable sugar beet seedrequires four or five years of patient careand toil. First, the seed is planted in well-prepared ground ; from the resulting cropselection is made of mother beets—those of proper size and weight, which showthe highest percentage of sugar, and thathave the most shapely form. The greentops are carefully removed by severing themwith a sharp knife close to the crown ; theroots are then placed in silo lor the winter.
