The efficiency of the Yaryan issaid to be due in part to the rapid motion of the liquor throughthe tubes and the more rapid absorption of heat which time required for liquor to pass through all the effects isbut a few minutes, and as only a small amount of Hquor ispresent at any one time the evaporator can be started andstopped very quickly.
