On the outskirts of Reggio Emilia the Credito Emiliano Bank accepts deposits of parmigiano cheese as collateral for loans to cheese producers. They hold 250 000 wheels of the famous cheese until it is aged and can be sold to repay the loans. Antonio Vincenti works high in the stacks all day placing and removing wheels of parmigiano as they reach maturation.
