Pizza, pasta, pasties and panini – many variations on bread in Naples’ Via dei Tribunali
A panino is a sandwich made from a small loaf of bread, typically a ciabatta. The loaf is cut horizontally and filled with ingredients such as salami, pancetta, meat, ricotta, mozzarella, vegetables, tomato, and sometimes served hot; literally, a small bread roll. Casatiello: Neapolitan lard bread: contains lard in the dough, plus whole unshelled eggs, pecorino and parmesan cheese, salami and bacon, pepper. Parigina: literally Parisian. Ciabatta: white wheatflour bread. Focaccia: pizza-like dough brushed with olive oil and baked, a delicacy of Liguria; used outside Italy for sandwiches.
