To the many methods of purifying, modifying, andpreserving milk must now be added a process forhomogenizing it so that it will keep almost indeflnite-. many purposes, to which milk is put. The fat globulesin milk vary greatly in size. Not only are thoseof some breeds and individuals of a large averagesize, but in the same sample of milk there are alwaysa considerable number of very minute globules andothers that by comparison are quite large. The largerglobules rise to the surface more rapidly, and have agreater tendency to coalesce. The very small-est globules never rise, but remain in a stateof suspension. This inactivity of the smaller globules hassuggested a mechanical means of renderingmilk non-creaming and thus preserving itshomogeneity. Such af process has been per-fected and patented by Gaulin of Paris, and iscoming into use in Europe. It is designed toreduce all the fat a very minutesize, by means of pressure and concussion.
