Agave workers, called a "jimadores" in Mexico, cut the leaves off the heart, or "piña" of a blue agave plant (Agave tequilana) with a special tool called a "coa" in a field near Arandas, Jalisco, Mexico. The tequila agave favors the high altitudes of its native Jalisco, Mexico. The blue agave is the base ingredient for tequila, mezcal and pulque.
