Rapid cooling to all brewers is of vital importance, for if wort be permitted to comeinto contact with the air during the time its caloric is given off, aciditv must set in, espe-cially in summer time. The best method to cool worts is that which is shown and described in the drawingannexed, _^^. VENTILATION OF MINES. 1067 The worts are passed through copper tubes, thoroughly tinned. Instead of passing acurrent of water round these tubes, a dew jei of water is sprinkled all over the outer sur-f;ice, at the same time a current of cold air is brought into contact with the moist surface ofthe tube, so that as fast as the molecules of caloric are transmitted to the water through themetal tubes, they are blown away, giving place to others. By this process heat from liquidscan be abstracted more rapidly than by any other. In fact, worts can be brought down tofreezing temperature, although tho water used may be 80 to lUO Fahr. Another greatadvantage is, that the quantity of water used is about one-half. These tubes can be cleaned with a brush with perfect ease. VEXTILATION OF MIXES.
