Culture.—Used the same as carrots, or, after having been boiled, made into cakes and fried like oysters, which they re- semble in flavor. Cultivate the same as carrots or parsnips; it is hardy; can remain in the ground all winter for early spring use, but should be taken up before it starts growing; take up a supply for use during the winter. Succeed best in a light, well- enriched mellow soil. Sow early in the spring in drills 15 inches apart, 1 inch deep; thin to 6 inches in rows. Mammoth Sandwich Island. (Seecut.) This variety of Salsify grows to a very large size and resembles a good-sized Parsnip. It is very mild and delicately flavored, and very popular.
