A pollack fillet, pollachius pollachius, from a fish that was caught on rod and line in the English Channel from a boat. It has been used to make homemade gravadlax, or gravlax, using salt, brown sugar, maple syrup, black pepper, crushed coriander seeds, wild chopped fennel, and beetroot juice for flavour and colouring. It is pictured before slicing on an acacia wood chopping board with a fennel frond from a plant found growing at the side of a footpath. Dorset England UK GB
