A pollack fillet, pollachius pollachius, from a fish that was caught on rod and line in the English Channel from a boat. It has been used to make homemade gravadlax, or gravlax, using salt, brown sugar, maple syrup, black pepper, crushed coriander seeds, wild chopped fennel, and beetroot juice for flavour and colouring.
