Salsify seed head


The giant seed head of Salsify, Tragopogon porrifolius. Salsify has small pink flowers in early Summer which produce giant downy clocks larger than those of the dandelion. The root is edible and apparently tastes like oysters hence the common name for Salsify is 'Poor Man's Oyster'. The plant is wild and grows on roadside verges, wasteland and in uncultivated fields. Telling the time refers to a childhood game of counting the hours of a clock by blowing on a seed head.
