RoRER, principal of the Philadelphia Cooking-school, the title of which is " How to Cook ; We have had cook-books devoted to soups, meats, pud- dings and fruits, but this is the first we have seen that makes a specialty of vegetables, the science of cooking which one finds in the introduction, also the name of each kind of vegetable that should properlv accompany various kinds of meat and fish. In the many recipes some of the good things long known to housewives of the past are retained, but clothed in new words, while added to them are many new ones, and ways of cooking vegetables not in common use. Xo one who owns this book need be at a loss for a new way to cook potatoes or other common vegetables, for there are given forty ways of cooking potatoes, twenty-six of tomatoes, and twenty-two of corn, beside twenty-eight of soups and thirty-seven of salads. The book also contains recipes for canning, pickling and preserving, and closes with a choice collection of bills of fare for each season of the year.
