The water joint is to be nearlyfilled at the commencement of the operation, and effectually preventsthe escape of the vapor. The long-continued application of a pretty high heat, which is neces-sary in distillation, involves an expense which, if gas or even charcoalfuel is employed, may approach the value of the alcohol recovered,so that in the winter time it is well to avail ourselves of the stove usedfor heating the apartment by fitting the still to it, and distilling slowlyat the moderate heat thus obtained. The advantage gained by theexclusion of the atmosphere in distillation is not to be overlookedwhen vegetable preparations are being concentrated.
