Known as lechon, it's a staple of holidays celebrations in the Christmas-obsessed Philippines. Leftovers will be made into a vinegar stew. Farmer say: "Lechon has always been a luxury out of reach for many Pinoys (from $100 to $250). Before, we bought it from suppliers. With inflation, we can't afford.
