Keep clear of weeds during the summer, and the ensuing spring the leaves will be fit to cut. They are best, however, when blanched, which makes them tender, and destroys to some extent their bitter taste without in an}- way. impairing the qualities which make them desirable as greens. The blanch- ing may be done by placing a couple of boards over the rows thus : A- This excludes the light and improves the greens, rendering them far superior to those growing wild in the grass without cultivation, which are almost sure to be bitter, and are often unsightlv and tough. Culture.—Sow in hot-beds, very early in spring, and transplant when two inches high into a second bed or into small pots. If that is not done, thin to four inches apart.
