Start seed in February in hotbed anil transplant to warm, rich, mellow soil after all danger from frost is past. Plants should be set 2 feet apart in row and cultivated just like Peppers or Tomatoes. The fruit is very handsome, large, smooth and round, and of a rich, shining purple-black color, and is borne until frost. Cook by cutting into half or quarter-inch slices, pare and let stand in salted water an hour. Drain and dip in egg or cracker crumbs and fry brown. May also be stewed or stuffed and baked. Vkt., 10c: 50c; ll>.. ENDIVE Green Curled—Well known in fashionable res- taurants under the name of Chicoree and partic- ularly fine served with Lettuce and French dress- ing. Sow seed from middle of June to end of August. When wanted for use blanch the inside leaves by tying the outer leaves together over the heart, and the plants will be ready for use in about one week after. Never tie up when the loaves are wet, as it induces decay. I'kt., 5c: 25c; lb., (1-75 White Curled Endive — Properly bleached plants of this variety are very beautiful, be- coming almost pure white, whereas the Green Curled variety bleaches to a clear yellow.
