The dairyman has for this purposea cheese-mould standing before him,and lays on the bottom a layer ofcheese without spice, and this iscalled the blind layer. The cheese: tub or mould, Pigs. 123 and 124, isused only for this first moulding. Itis a wooden vat, made of staves fromone to one and a half inches thick,and is nine and a half to twelve and a half inches indiameter, and about ten inches high, bound at thebottom and top with stout bottom of oak-wood, put invery carefully, is pierced with holesfor letting off any moisture that mayremain in the cheese. On the top of* the tub a cover is exactly fitted, tosink down upon the cheese whenthe pressure is applied. This coveris of oak, one and a half inches thick, and has a cross-piece three and a half inches thick, which serves as Kg. 123.
