Max Wallerstein (), German-US chemist. In 1902, he and his brother Leo Wallerstein () founded Wallerstein Laboratories in New York, USA, to provide consultation services to the brewing industry. This included research into fermentation, as well as enzymes used in manufacturing and food industries.
