Buffalo burgers are a favorite menu item in restaurants on Santa Catalina Island, a popular vacation getaway in the Pacific Ocean that is just 26 miles (42 kilometers) west of Los Angeles in Southern California, USA. That's because the American bison became a symbol of Catalina after14 buffalo were brought there in 1924 to appear in a Hollywood cowboy movie and eventually grew into a herd of more than 500 animals. That number has since been reduced to about 150 to protect the arid island's native plant life and the health of future bison meat from grass-fed buffalo is low in fat.

Most visitors are happy to learn that the buffalo meat for Catalina's burgers is imported from bison ranches in South Dakota. The meat from grass-fed buffalo is low in fat and calories and high in protein.
