The Condenser.— The condenser is that portion of the condensing ap- paratus in which the vapors, rising from the boihng milk in the pan, are condensed to water. The condenser is attached to the dome of the pan. There are three types of condensers in use, the surface condenser, the baro- metric condenser and the wet-vacuum spray Fig. 19. The water used for cooling circulates out- side of the tubes and the vapors pass through the tubes, where they are chilled and condensed. This conden- ser has the advantage of enabling the operator to note the amount of con- densation and to measure the amount of water actually condensed. The re- ceiver at the bottom of the condenser should be so arranged that it can be drained at will and without interfer- ing with or retarding the operation of the pan.
