An old engraving of men treading grapes in a wine press, Syria in the 1800s. It is from a Victorian book of the 1880s. Grape-treading or grape-stomping (also known as pigeage) is part of the method of maceration used in traditional wine-making. Rather than being crushed in a press grapes are repeatedly trampled in vats or tanks by barefoot workers to release their juices and begin fermentation. Here men do the treading whilst women bring in bunches of grapes. The grape juice runs from outlets in side of the tank. Grape-treading was widespread in the history of winemaking.
