The turkey, with care and attention, may be made the most profitable member of the poultry yard, and it furnishes flesh of a very delicate and delicious nature. No one objects to feast off turkey, and at Christmas time a bird for the table is almost a sine qua uoii in every household. The sorts kc]it in this country are the Old Norfolk, probably the most hardy of all; but they are only of moderate size, and are fast being superseded by the larger and more showy Cambridge breed. Norfolk turkeys are black in colour, and the average weight does not exceed 5 or 6 lb. Cambridge.
