A grilled, sliced half of a British lamb’s heart that has been cooked in a homemade version of the Peruvian dish of anticuchos. It was marinated in a mixture of white wine vinegar, olive oil, crushed coriander seeds, cumin powder, crushed garlic, black pepper, sea salt and hot chillis. It was then skewered on bamboo kebab skewers and grilled before being sliced and served with harissa paste. Dorset England UK GB
