Take up the roots in November or before severe frosts ; cut off the tops within an inch of the crown, store in a cool cellar or pit, or pile up in a conical form, out of doors, in dry ground ; cover carefully with long straw, and finish by earthing up, covering them with about 12 or 15 inches of earth, leaving a trench around the iieap to carry off the water.
