The giant thistle, Cynara cardunculus, also known as the Cardoon.


Growing 2 metres high or more, Cardoons were once a Victorian vegetable, but are generally nowadays used as an ornamental and architectural flowering plant. Avoid the temptation to remove the faded flower-heads in autumn as they provide interest in the winter garden. Awarded the AGM by Royal Horticultural Society.
