Windmill in Tefia, island of Fuerteventura, Canary Islands, Spain


The windmills near the north-to-south spinal ridge of Fuerteventura, and centred around Tefia, were built for the processing of cereals to be made into gofio, for many centuries the Canarians staple foodstuff. First toasted, then ground to flour, gofio is more nutritious than it sounds. It is rich in magnesium, calcium, sodium, iron, fibre and protein. It can be mixed into meat and fish stock, savoury stews and sweet desserts, and pepped up with the traditional parsley or hot chili mojo sauces. The Canaries are a group of islands lying 100 kilometres to the west of the north African coast.
