Fresh pasta rolled flat for lasagne, rolled using a long needle to make Macaroni or "Little Ears" Oriecchetti.


You can make a wide range of shapes with pasta. In Southern Italy, they only use 00 grade flour and water to make it. The further North you travel, the more egg is added to the recipes for making pasta. Pasta is rich in carbohydrates but can be fattening. The shapes have developed to carry different thicknesses of sauce. Little Ears pasta is typical of the Lecce area of Apulia. Athletes use pasta to provide them with energy before a race.
