Large Sugar, or Hollow Pfeffer, Ger. Piment. Fr. Pimiento, Sp. Peppers are indispensable as a seasoning for soups and meats. The large varieties are mainly used for this purpose and pickling. The mild, sweet varieties, like Golden Dawn and Ruby King, are used for Mangoes, while the small fruited sorts are the best for sauces. Sow in hot-beds in March or April, or on a warm sheltered border in May, and, when the season is favor- able, transplant in rows 2 feet apart and 18 inches in the row, in good, rich, mellow ground.
