Salt pans. Salt is extracted from sea water that infiltrates an extinct volcanic crater on the coast of Sal island, Cape Verde. The water evaporates off during the day, then the deposit of salt is collected & refined. Salt is an important raw material in the chemical industry, and also widely used in the preservation and flavouring of food. A pulley system (lower right to left) formerly brought salt up from the crater floor.
