The breed have since become comparatively well known, and are now kept by several private persons and breeders ;Tinongst whom may be mentioned the well-known M. Du Gue 40 THE POULTRY-BOOK. This variety of fowl so far • surpasses, both in size andpower, all that we have ever yet seen in the shape of poultry,as to have led many persons not conversant witli zoology, onfirst viewing them, to refer them to the family of are, however, genuine poultry. Their general color isrich, glossy brown, deep bay; on the breast is a marking of ablackish color, and of the shape of a horse-shoe; the comb isof a medium size, serrated, but not deeply so, and the wattlesare double. Besides their size, however, these fowl possess. COCHIN CHINA HEN. Other distinctive characteristics, among which the most strikingis that the wing is jointed, so that the posterior half can, atpleasure, be doubled up, and brought forward between the ante-rior half and the body. The birds can do this at pleasure, andthe appearance the mancEuvre imparts to their form has pro-cured for them the title of ostrich fowl. The flesh is whiteand delicate. The eggs laid by the hen of this variety arelarge, of a chocolate color, and possess a very delicate flavor VARIETIES OF DOMESTIC FOWL. 41 They are very prolific, frequently laying two, and occasionallythree eggs on the same day, and within a few moments of eachother. An anonymous writer in the Gardeners^ Chrnyiide callsthis statement of mine in question. I now heg to refer, as myauthorities, to the Right Hon. Mr. Shaw, the Recorder of Dub-lin
