Threatened with extinction the giant Louisiana Grasshopper or Big Whoppers as they are locally known, are back on the menu as it were. Once purely the target for hunters and their trophy cabinets they are now much more likely to be found in their kitchens. Insect eating is all the rage in upmarket restaurants around the world. Not my cup of tea but very popular in certain parts I am led to believe. Note - Hunting season runs from April 1st until April 1st.
