An 'asado' is a typical meat barbeque particularly popular in the Pampas regions of Chile and Argentina as well as Paraguay and Uruguay. The pictured asado is typical - a carcass held on metal crosses above a fire on the ground. Meat in the Chilean and Argentinean Patagonia is usually pork or (as pictured) lamb.
