A wood pigeon breast, Columba palumbus, that was from a wood pigeon shot with a shotgun loaded with lead pellets for the purpose of crop protection. The breast has been flash fried in oil to keep it rare, sliced and served with on a heart-shaped rosti potato with a parcel of carrots and leaks, fried tomatoes and gravy. Unless cooked rare, as in this case, wood pigeon should be cooked for a long time otherwise it can be tough. England UK GB.
