Lactic acid fermentation of the carbohydrates takes place spontaneouslyin milk, in the juice of the sugar-beet, in the accumulations in the oralcavity, etc., and may be artificially induced by a large number of differentbacteria in saccharine solutions. (Miller.) Acids and alkalies possess a certain amount of controlling influence inthe growth of bacteria, especially the former. Acids in very dilute solu-tion retard the development of bacteria.
