Dark-green in color,it has a golden heart and a rich, nutty flavor. Unlike some of theself-blanching varieties, this is a line keeper, being found in themarkets of Paris from the end of December to the beginning ofMarch. This is the bean which sells in Boston market at from 25 to 40cents a bushel above the ordinary varieties of pea bean and me-diums.
